Creamy Chicken, Mushroom & Bacon Pasta

Ingredients

• 400 g dried spaghetti
• 1 tbsp olive oil
• 200 g button mushrooms sliced
• 150 g streaky bacon chopped
• 500 g chicken breasts (boneless, skin off) skinlesschicken breasts, cut into bite-sized pieces
• 1 onion finely chopped

• ⅓ Cup chicken stock
• ½ Cup grated Parmesan cheese
• 1 handful fresh parsley chopped
• 1 Cup grated courgette
• 1 Cup grated carrot
• 100 g baby spinach leaves
