• 3 cups grated carrots
• 1 cup, total, add-ins (raisins, currants, walnuts, or pecans)
• For the Cream Cheese Frosting:
• 8 ounces cream cheese, room temperature
• 6 tablespoons unsalted butter, room temperature
• 1 tsp salt
• 2 cups powdered sugar
• 1 tablespoon vanilla extract
