Bread and Spinach Soup

Ingredients

• 15 ml Greek-Style Yoghurt
• 1 tbsp, to serve
• 1 piece Lime juice only
• 85 g White Crusty Bread torn
• 300 ml Vegetable Stock can substitute with chicken stock
• 5 tbsp Parsley fresh, chopped
• 1 pinch Salt to taste
• 1 pinch Black Pepper freshly ground, to taste
• 30 ml Vegetable Oil 2 tbsp
• 0.5 piece Onion chopped
• 200 g Spinach Leaves roughly chopped
