• 1 cup dry breadcrumbs
• ½ cup whole milk
• 1 pound ground beef
• ¼ pound ground pork
• 1 large egg, lightly beaten
• 2 large garlic cloves, peeled, trimmed and crushed
• 1 tablespoon minced shallot
• ¼ teaspoon ground fennel seed
• ¼ teaspoon red chile flakes, optional
• 1 tablespoon chopped flat leaf parsley
• ¼ cup shredded Parmesan
• 2 teaspoons salt
• Freshly ground pepper
