Black Bean Bake

Ingredients

• 1 tablespoon Olive oil
• 1 tablespoon Garlic minced
• 1 1/2 cups Tomatoes diced
• 1 1/2 cups Black beans drained and rinsed
• 1/2 teaspoon Ground cumin
• 1/4 teaspoon Salt
• 4 Eggs
• 1/4 cups Scallions chopped
• 1 pinch Ground black pepper
