• 100 grams good quality bittersweet chocolate bar, roughly chopped
• 100 grams good quality milk chocolate bar, roughly chopped
• 1 teaspoon vanilla extract
• 1 teaspoon baking soda
• 1/2 teaspoon flaky sea salt, for topping
• 1 cup (200 grams) granulated sugar
• 1/2 cup 35% cream
• 6 tablespoons (90 grams) unsalted butter, diced and room temperature
• 1/2 teaspoon kosher salt
