• 1 C. butter OR margarine, softened
• 1 C. brown sugar
• 1 tsp. Spice Islands® Pure Vanilla Extract
• 2 eggs
• 1-1/2 C. shredded carrots
• 1/2 C. sugar
• 1 tsp. salt
• 3 oz cream cheese, softened
• 1 to 2 Tbsp. lemon juice OR milk
• 1 tsp. freshly grated lemon peel
• 1 pinch salt
• 2 C. powdered sugar
• 1/4 C. butter OR margarine, softened
