Spicy Baked Mackerel with Refreshing Mango Coleslaw

Ingredients

• mackerel, 4 gutted and halves
• red chili pepper, 2 seeds removed and finely chopped
• garlic, 4 cloves minced
• fresh ginger, 1 tbsp grated
• brown sugar, 1 tsp
• olive oil, 4 tbsp
• ripe mangoes, 2 peeled and julienned
• small red onion, 1 thinly sliced
• cabbage, 1 cup shredded
• fresh cilantro, 1 bunch chopped
• lime, 1 juiced
• salt, to taste
• pepper, to taste
