Walnut sweet potato rolls -

Ingredients

• 2 tbs extra virgin olive oil
• 1 large sweet potato, peeled and sliced thinly lengthways
• 2 tbs sundried tomatoes
• 2 tbs fresh coriander, chopped
• Juice 1 lemon
• 2 tsp cumin
• 1/2 tsp paprika
• 1/2 cup mushrooms, sliced
• 1 garlic clove, peeled and roughly chopped
• 1 cup crushed walnuts
• 1 small carrot, peeled and grated
• 1 small cucumber, thinly sliced
• 1/2 avocado, thinly sliced
