• 4 pounds ripe tomatoes, peeled and seeded
• 1/2 cup chopped shallots
• 1/3 cup packed brown sugar, divided
• 1/2 cup apple cider vinegar
• 1 teaspoon celery seeds
• 1/2 teaspoon kosher salt
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon ground allspice
