Bruschetta with colourful tomatoes and basil | Metro

Ingredients

• 1 small red onion, finely chopped
• 2 garlic cloves, minced
• 1/3 cup of fresh basil, leaves only, chopped
• 7 tablespoons (100 mL) Irresistibles extra virgin olive oil
• 1 tablespoon sherry or white balsamic vinegar
• 3 cups (450 g) (16 oz) of tomatoes, roughly chopped
• 1 baguette bread sliced
• salt and freshly ground black pepper
