Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 onion, coarsely chopped
  • 2 stalks celery, chopped
  • 1 large leek, white part only, sliced
  • 2 carrots, thickly sliced
  • 400 g lean boneless rabbit, diced
  • 1.25 litres chicken stock, preferably homemade
  • 2 teaspoons red wine vinegar
  • 1 tablespoon redcurrant jelly
  • 1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
  • ⅔ cup (125 g) mixed long–grain and wild rice
  • 1 cup (125 g) sliced green beans or frozen sliced green beans
  • salt
  • pepper
  • 2 cups (250 g) medium oatmeal
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 1½ tablespoons (30 g) butter, melted
