Lemon Cheesecake – Turley Hill

Ingredients

• 2 cups shortbread cookie crumbs
• 1/4 cup sugar
• 1/2 cup (1 stick) butter
• 4 pkgs. (8 oz. each), softened
• 1 cup sugar
• 1/2 cup heavy cream
• 1 tbsp lemon zest
• 1/4 cup fresh lemon juice
• 2 tbsp flour
• 2 tsp vanilla extract
• 1 tsp lemon extract
• 8-10 drops yellow food coloring
• 5 eggs, room temperature
• 1 cup whipped cream, for topping
• 1 lemon, thinly sliced, seeds removed, for garnish
