Ingredients

• 3 tbsp Butter
• 1 cup Yellow Onion, diced
• 4 Garlic Cloves, minced
• ¼ cup Flour
• 32 oz Chicken or Vegetable Stock
• 2 cups Half-n-Half
• 1 ½ lbs Yellow Potatoes, peeled, 1/2" cubes (bite size),
• 2 tsp Salt plus 1/2 tsp for finishing
• 2 tsp Garlic Powder
• 1 tsp Dried Mustard
• 1 tsp Dried Thyme
• ¼ tsp Pepper
• 1 cup Cheddar Cheese, shredded, 16-18 mos. aged preferable
• 14 cups Green Onion, chopped
• 1 tbsp Sour Cream
• 1 tbsp Parmesan Cheese
• 1 dash Nutmeg
