Ingredients

• 1 lb diced Roma tomatoes, seeds removed
• 2 minced garlic cloves
• 1/2 cup fresh basil, torn into pieces, plus extra whole leaves to decorate
• 1 tbsp balsamic vinegar
• Salt (Kosher works well) to taste
• Black pepper, freshly ground, as needed
• 8 oz angel hair pasta
• 1 to 1.5 lbs chicken breasts, boneless and skinless
• 1 tbsp olive oil, with extra handy if needed
• Balsamic glaze, optional for finishing up
