Ingredients

• 1 teaspoon baking soda
• 2 cups chopped bananas
• 1 (8-ounce) can crushed pineapple, undrained
• 1 cup vegetable or canola oil
• 2 packages cream cheese, softened slightly
• 3 large eggs, beaten
• 3 cups all-purpose flour
• 1 teaspoon ground cinnamon
• 1 cup chopped pecans
• 5 cups sifted powdered sugar (sift and then measure)
• 1 teaspoon salt
• 2 cups sugar
• 1 cup unsalted butter, softened slightly
• 1 1/2 teaspoons vanilla extract
