• 1 pound Chef Paul Prudhomme's Tasso, diced
• 8 ounces fresh mushrooms, sliced
• 12 eggs
• 3 cups half & half
• 7 slices crustless sour dough bread, cubed or your favorite white bread
• ¾ pound Mozzarella cheese, grated
• ¾ pound sharp cheddar cheese, grated
