• 1/4 cup vegan margarine, softened
• 1 scant cup sugar or other sweetener
• 2 heaping teaspoons soy flour + 2 tablespoons water
• 2 large bananas, mashed
• 2 cups flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 cup nondairy milk (I use soy)
• 1 tablespoon cider vinegar
• 1 teaspoon vanilla
• 1/3 cup coconut, toasted until light brown, optional
