- 1 tablespoon ground cumin
- 1 tablespoon oregano
- 4 garlic cloves, minced
- 1 minced onion
- 1 cup grated queso blanco (a hard white Mexican cheese that tastes like mild feta)
- 1/4 cup olive oil
- Juice of 2 limes
- 2 pounds coarsely ground natural pork
- 2 pieces minced natural wood-smoked bacon
- 1 tablespoons kosher salt
- 1 tablespoons dried oregano
- 2 tablespoons minced fresh cilantro
- 2 tablespoons chipotle pepper in adobo
- 1 tablespoon lime juice
- 1 tablespoon Ancho chili powder
- 2 tablespoons ground cumin
