• 1 large onion, chopped
• 2 sticks celery, finely chopped
• 1 large carrot, finely sliced or grated
• 1 tablespoon plain flour
• Chicken stock/2 cubes
• 2-3lb cooked chicken, cut into thin strips/forked
• Handful of chopped fresh parsley/1 teaspoon ground parsley
• 1 teaspoon Thyme
• Seasoning
