Rainbow Cookies recipe by Ruhana Ebrahim

Ingredients

• 250g Stork to bake
• 1 cup castor sugar
• 1 extra large egg
• 1 tablespoon vanilla essence
• +/- 3 cups flour (as needed)
• 1 teaspoon baking powder
• Red, blue, green, yellow, purple, orange food coloring
• 1. Beat margarine & sugar till pale & fluffy.
• 2. Beat in egg & vanilla.
• 3. Sift flour.
• 4. Add baking powder and flour (as needed), binding by hand till soft dough forms.
• 5. Divide dough into 6 portions.
• 6. Color with few drops coloring separately.
• 7. Roll the different colors into even ropes of dough.
• 8. Place the colors next to each other & cut into even sized rectangles.
• 9. Place on a lined cookie sheet, few cms apart, as it spreads.
• 10. Place in preheated oven at 160degC.
• 11. Bake for 15min. Remove from oven.
• 12. Allow to cool and crisp before moving.
• 13. Leave as is, or dip the fronts into castor
