Ingredients

• 1/2 pkg (350 g) Italpasta Scoobi Do
• 3/4 cup (175 mL) mayonnaise
• 2 tbsp (30 mL) lemon zest
• 1/3 cup (75 mL) lemon juice
• 1/4 cup (60 mL) drained capers (coarsely chopped)
• 1/4 cup (60 mL) olive oil
• 4 tsp (20 mL) Dijon mustard
• 4 tsp (20 mL) soy sauce
• 2 cloves garlic (minced)
• 1/2 tsp (2 mL) salt
• 1/2 tsp (2 mL) pepper
• 1 cup (250 mL) grated Parmesan cheese (divided)
• 1 head romaine lettuce, chopped (about 4 cups/1 L)
• 1 cup (250 mL) toasted diced cubes sourdough or rustic Italian bread (1/2-inch/1 cm cubes)
