Corn Salsa

Ingredients

• 1 14.5-oz can diced tomatoes (not drained) or 1.5 cup
• 2/3 cup frozen kernel corn
• 1 cup cucumber not peeled, chopped
• 1/2 cup bell pepper red or green, chopped
• 1/4 cup fresh cilantro chopped
• 2 tablespoons red wine vinegar
• 1/2 teaspoon ground cumin
• 1/4 teaspoon salt (optional)
• 1/8 teaspoon ground black pepper
• 1/8 teaspoon Cayenne pepper
