Ingredients

• 3 cups orange juice
• 1 1/3 cup light brown sugar
• 1 orange zested
• 1 stick cinnamon
• 2 tsp whole peppercorns
• 1/4 tsp ground allspice
• 1/4 cup + 2 tsp Striped Pig Rum
• 8-10 lb bone in ham
• 1 1/2 tbs salt
• 1 1/2 tsp creole
• 2 tsp pepper
• 2 1/2 tsp paprika
• 2 tbs garlic powder
• 1 tbs onion powder
• 1 tbs cayenne pepper
• 1 tbs dried oregano
• 1 tbs thyme
