Korean-style barbecued skirt steak with gochujang mayo by Niamh Shields - Irish Beef

Ingredients

• 600g of beef skirt, (2 steaks)
• 2 tbsp of gochujang
• 2 tbsp of soy sauce
• 1 tbsp of Korean anchovy sauce, (or fish sauce if you can‚Äôt source this)
• 1 tbsp of rice vinegar
• 1 tbsp of runny honey
• 3 tbsp of gochujang
• 3 tbsp of mayonnaise
• 4 spring onions, white parts cut lengthways and green parts finely sliced
• 1 handful of coriander
