Ingredients

• 16 ounces pretzel bread, cut into 1-inch cubes (10 cups)
• 2 celery ribs, chopped
• 1 large onion, chopped
• 6 tablespoons butter, cubed
• 1 cup beer
• 1 pound bacon, cooked and crumbled
• 1 tablespoon plus 1 1/2 teaspoons minced fresh thyme
• Salt and pepper to taste
• 1 cup chicken broth
• 1 large egg
• 12 ounces Springside Beer Cheddar cheese or Renard's Beer Cheddar cheese, shredded (3 cups)
