  • coriander seeds
  • 1 tsp peppercorns
  • 2 bay leaves
  • cloves (purely decorative and presentation)
  • ½ cup muscovado sugar ( or any soft brown sugar)
  • ¾ to 1 cup honey
  • 1 ½ tbsps Dijon mustard
  • 2 tbsps. unsalted butter
