Ingredients
- 1 1/2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1/2 cup oil
- 4 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tsp instant coffee
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup powdered sugar
- In a large bowl, beat granulated sugar, cocoa powder, and oil together until combined and glossy.
- Add eggs one at a time.
- Add instant coffee and vanilla to the sugar-egg mixture.
- In a separate large bowl, mix the flour, baking powder, and salt together. Slowly add the dry mix to the cocoa mixture and stir until just combined. The mixture will be very thick and sticky.
- Refrigerate overnight or at least 2 hours. This makes the dough easier to handle with the powdered sugar.
- Preheat oven to 350F.
- Use an ice cream scoop to portion out cookie balls. Roll in powdered sugar and place onto a prepared baking sheet.
- Bake for 6-8 minutes. They’re done when firm and slightly puffed in the middle.
- Cool on sheet and transfer to wire rack. Enjoy!
