Wyatt's Cafeteria Baked Eggplant recipe - from the Nina's Friends and Family Cookbook Family Cookbook

Ingredients

• 1 lb eggplant, peeled
• 1/2 lb bread crumbs
• 1/2 C evaporated milk
• 1/4 C melted butter
• 1/4 C finely chopped onions, bell peppers, and celery
• 1/4 C milk
• 2 eggs. slightly beaten
• 1 T chopped pimiento
• 2 t salt
• 1/2 t pepper
• 1/4 t sage
• 1/8 t monosodium glutamate
• 1 1/2 C grated cheddar cheese
