• 1 1/2 pounds Baby spinach
• 2 tablespoons Extra virgin olive oil
• 2 tablespoons Unsalted butter
• 1/2 large Onion chopped
• 2 Poblano chili peppers Seeded and chopped
• 1 pound Button mushrooms Thinly sliced
• 2 cloves Garlic minced
• 3 tablespoons All purpose flour
• 2 cups Low sodium chicken broth
• 3/4 cups Sour cream
• 6 ounces Gruyere cheese Grated
• 6 ounces Muenster cheese Grated
• 1/2 cups Fresh Cilantro chopped
