- 4 bundles dried ramen noodles, cooked per package instructions (without the flavor packets) drained, rinsed and set aside to cool
- ½ lb. peeled, deveined, cooked shrimp
- 4 pieces brown sugar ham, thinly sliced
- 1 small cucumber, julienned
- 1 small carrot, julienned
- 1 scallion, julienned
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 4 hard-boiled eggs, peeled
- ½ cup soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon sesame oil
- ¼ cup toasted sesame seeds
- ½ cup Duke’s Mayonnaise
- 1-2 teaspoons sriracha
- 1 tablespoon rice wine vinegar
