• 2 1/2 cups water
• 3/4 cup brown lentils, uncooked
• 2 Tbsp balsamic vinegar
• 2 Tbsp freshly squeezed lemon juice
• 2 Tbsp cold-pressed, extra-virgin olive oil
• 1 large orange bell pepper, diced
• 1 cup frozen corn or kernels from 2 fresh ears of corn
• 3 cups loosely packed baby spinach or other greens
• 1/2 cup arugula / rocket
• 2 scallions, thinly sliced
• 1/4 tsp Celtic sea salt or Himalayan salt
• 1/4 tsp ground black pepper
• 1/4 tsp fresh lemon zest
