Fish Gratin with Salmon, Cod, Shrimps and White Wine Sauce – Crucible Cookware

• 300 g salmon, 2×2 cm cubes
• 300 g cod, 2×2 cm cubes
• 100 g peeled shrimps
• 1 kg potatoes
• 1,5 dl milk
• 3 tbsp butter
• 1 yolk
• salt and pepper
• 2 dl cream
• 1 dl milk
• 1,5 dl white wine
• 2 tbsp flour
• 2 tbsp shellfish fond, lobster fond, or 1 fish stock cube
• 2 ml cayenne pepper
• 0,5 tsp raw sugar
• 1 tbsp butter
