  • 2 tablespoons finely chopped fresh cilantro
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder (use more or less depending how spicy you want it)
  • 1/2 teaspoon baking powder
  • 1/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 2 cups corn kernels, cooked fresh or just frozen
  • Extra cotija cheese if you want
  • More chili powder (only if you like things spicy)
  • 1 tablespoon lime juice, fresh squeezed
