• 1 knob of organic butter
• 350 g fresh organic spinach, finely chopped (or 280g frozen and thawed)
• 4 organic, pasture-raised eggs
• 1 1/4 cups organic, whole milk
• 1/2 tsp salt
• 1 pinch nutmeg
• 50 g grated organic Comte cheese or vegetarian alternative
• 50 g grated organic Emmental cheese from a vegetarian brand
