• 3 cups sharp cheddar cheese, grated, divided
• 1 (2.25-ounce) package toasted slivered almonds
• 1/4 cup pimentos, drained and chopped
• 1 (4-ounce) can sliced mushrooms, drained
• salt, to taste
• pepper, to taste
• parsley, to taste, chopped, for garnish
