CRANBERRY CAKE – Sarafino

Ingredients

• 3 large eggs
• 2 cups raw cane sugar or maple sugar
• ¾ cup unsalted butter, cubed and softened at room temperature from 1 hour
• 1 tsp vanilla extract
• 1 tsp almond extract (optional)
• 2 cups Chestnut Flour – Sarafino
• 1 tsp sea salt
• 2 ½ cups fresh or frozen cranberries (12 oz)
• ¼ cup (4 tbsp) unsalted butter
• ¼ cup raw cane sugar or maple sugar
• 1 cup raw pecans
