Pasta with a Garlic Eggplant Sauce - The Olive Tap Recipes

Ingredients

• 1 lb. package of Rigatoni, Penne or Ziti
• 2 small eggplants
• 4 T. The Olive Tap’s , divided
• 4 large tomatoes, peeled and seeded
• 1 small onion, chopped
• 1 carrot, chopped
• 1 t. dried oregano
• Salt and pepper (2 tsp salt and ½ tsp pepper)
• 8 fresh basil leaves, minced
• ½ C. grated Parmesan cheese
