This fresh corn salad is an almost-constant staple at my table...summer when the corn is so sweet and tender I use it raw..corn salad leftovers
Ingredients
- 6 ears of corn kernels, all husks removed
- 1/4 cup finely chopped dill
- 1/2 red pepper, cut in tiny dice
- 4 scallions, sliced very thin
- 1/3 cup extra virgin olive oil
- 3-4 tablespoons balsamic vinegar
- Salt and white pepper to taste
