Spinach & Bacon Quiche

Ingredients

• 2 tablespoons olive oil
• 1 onion chopped
• 1 7 ounce container baby spinach
• 2 large eggs
• 2 egg whites
• 1/2 cup low fat milk
• 1 cup part skim ricotta cheese
• 1/2 teaspoon salt
• 1/8 teaspoon Cayenne pepper
• pinch nutmeg
• 1/2 cup reduced fat shredded Swiss cheese
• 3 slices bacon cooked and crumbled
