- 1 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 1 cup unsalted butter
- 1 3/4 cups sugar
- 5 eggs (separated)
- 1 cup buttermilk
- 1/3 cup poppy seeds
- 1 tablespoon lemon rind ( or orange rind)
