- 1-1/2 cups unsweetened coconut milk
- 3 tablespoons lime or orange marmalade
- 1 cup fresh orange, peeled and diced
- 1 cup fresh mango, peeled and diced
- 1 cup fresh pineapple, peeled and diced
- 1/4 cup chopped fresh cilantro
- Basmati rice, prepared according to direction
- Salt and pepper to taste
