Spinach Pie

Ingredients

• 1 (9 inch) pie crust unbaked
• 2 tablespoons olive oil
• 6 cloves garlic minced
• 1 onion chopped
• 1 pound fresh spinach washed and drained
• 2 Eggs beaten
• 1 cup half-and-half
• 1 teaspoon lemon zest grated
• 1 teaspoon fresh thyme leaves chopped
• 6 oz feta cheese crumbled
• 8 oz swiss cheese grated
