Creamy Vegetarian Potato Soup with White Beans

Ingredients

• 2 tbsp olive oil
• 3 carrots
• 2 celery stalks
• 1 onion
• 1-2 jalapeños
• 4 cloves garlic, minced
• 1/2 teaspoon salt
• Pepper for taste
• 1/4 cup all purpose flour
• 3 cups milk (regular or plant based milk works here, I use almond)
• 2 cups vegetable broth
• 3 russet potatoes, peeled and cubed
• 1 can great northern white beans
• Optional Toppings - sour cream, cheese, chives, parsley
