• 2 medium carrots, roughly grated
• 1 lime, juiced
• ¼ cup cilantro leaves, finely chopped (optional)
• 2-3 tbsp. white wine vinegar OR apple cider vinegar
• ⅛ tsp. cayenne pepper OR chili powder
• ¼ tsp. salt
• 1 tbsp. sugar
