• 1/2 red onion
• 1/2 small leek
• 1 garlic clove, chopped
• 5 cup(s) chicken stock
• 3 bay leaves
• 1 tablespoon olive oil
• 2 tablespoons apple cider vinegar Pinch salt and pepper to taste
• 1 tablespoon butter
• 2 tablespoons, ricotta cheese
• 1 squeeze lemon
