- 3-5 medium sized beets (simmered until fork tender and peeled)
- 1 red onion (thinly slivered)
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- pinch of salt
- 2-3 turns of a pepper mill
- sprinkle of garlic powder
- 1 teaspoon sugar
