Ingredients

• 3/4 lb (375 g) gemelli or other short pasta
• 1 shallot, finely chopped
• 1 garlic clove, finely chopped
• 2 tbsp butter
• 2 tsp unbleached all-purpose flour
• 1/2 cup (125 ml) white wine
• 1 cup (250 ml) 15% cooking cream or 35% cream
• 1 cup (30 g) spinach, coarsely chopped
• 1/2 cup (35 g) Parmesan cheese, freshly grated
• 1/2 cup (23 g) mixed fresh herbs, chopped (such as chives, basil, oregano)
• ½ recipe steamed salmon confit
• Arugula, to taste (optional)
