Leek & Potato Soup

Ingredients

• 2 tbsp Flora Buttery
• 3 Medium leeks, thinly sliced, white parts only
• 250 ml boiling water
• 1 Knorr Reduced Salt Chicken Stock Cube
• 3 Medium potatoes, peeled and diced
• 3 Medium carrots thinly sliced
• 1/2 tsp dried marjoram leaves
• 1/2 tsp dried thyme leaves
• 1/4 tsp pepper
• 2 tbsp cornflour
• 500 ml skimmed milk
• fresh parsley chopped, optional
