• 2 cups corn (fresh, frozen and thawed, or canned and drained)
• 1 can Red Gold Mild Diced Tomatoes + Green Chilies 10 oz, not drained
• ½ teaspoon smoked paprika
• ½ teaspoon cumin
• Kosher salt and freshly ground black pepper, to taste
• 4 ounces cream cheese, softened
• ⅓ cup sour cream or Greek yogurt
• 1 cup shredded cheese (Monterey Jack, mozzarella, or Mexican blend), divided
• Jalapenos, for garnish (optional)
